Les aliments ultra-transformés : ce qu’il faut savoir ! 

Les aliments ultra-transformés sont partout au point que l’on ne se rend même plus compte lorsque l’on en consomme certains. On les trouve dans toutes les enseignes et sous toutes les marques (bio, marques de distributeurs, marques nationales). Comment expliquer cette recrudescence de produits ultra-transformés et quel est l’impact sur la santé?

Des aliments sont considérés ultra-transformés quand ils ont subi des procédés industriels de transformation (huile hydrogénée, amidon modifié, etc.) et contiennent de nombreux ingrédients, notamment des additifs.

Produits ultra-transformés nutritionnellement inintéressants

Toutes les boissons, barres de chocolats, confiseries, plats préparés, gâteaux sont des produits et aliments ultra-transformés. Ces produits sont nutritionnellement très denses c’est à dire riches en calories, sucres, sel et gras. Ils contiennent pour la majorité peu de fruits, légumes et nutriments intéressants comme les vitamines. Le mélange sucre gras sel, les textures et les odeurs sont travaillées pour apporter un plaisir gustatif. Cela les rend très attractif et pousse à en consommer une grande quantité. De plus, leurs quantités de fibres et protéines restent généralement plus faibles qu’un produit peu transformé. Leur pouvoir satiétogène s’en retrouve diminué. 

Vous l’aurez compris, ces produits sont créés pour apporter du plaisir mais leur intérêt nutritionnel est nul voir négatif lorsqu’ils sont consommés régulièrement et en grande quantité.

La santé dans tout ça ?

Vous l’aurez compris, il faut limiter la consommation de tels produits. Bien évidemment s’accorder un petit plaisir de temps en temps ne détériorera pas votre santé, c’est leur consommation régulière et en grande quantité qui pose majoritairement problème. 

Produits ultra-transformés nutritionnellement intéressants


Il existe aussi des aliments ultra-transformés jugés sains, mais le sont-ils vraiment ?

On peut par exemple citer les galettes de riz, les corn flakes sans sucre ajouté, la crème allégée, la margarine, les boissons végétales, les barres protéinées ou faibles en calorie, les gâteaux bio aux farines complètes, les substituts de viandes, le lait infantile, les repas déshydratés…

Consommer ces produits ultra-transformés plus intéressants nutritionnellement est possible mais il faut savoir que leurs équivalents peu transformés seront toujours meilleurs pour votre santé.

Pour exemple, il est préférable de consommer des flocons d’avoine plutôt que des corn flakes. Les corn flakes ont un indice glycémique plus élevé et les fibres contenues dans les flocons d’avoine sont plus intéressantes pour leur effet coupe-faim.

Alors à consommer ou non pour une bonne santé ?

Il n’est pas nécessaire d’abandonner tous les produits ultra-transformés s’ils sont consommés de manière raisonnée. Par exemple, si le seul produit ultra-transformé de votre petit déjeuner est un verre de pur jus d’orange du commerce cela ne va pas mettre en danger votre santé. De même si vous devez vous déplacer dans un endroit qui ne permet pas de garder des aliments dans des conditions sanitaires optimales, il sera préférable de favoriser des produits ultra-transformés qui peuvent être consommés dans des conditions plus extrêmes de par leur conditionnement et format. Ainsi les aliments ultra-transformés plus sains nutritionnellement peuvent être un complément dans une alimentation majoritairement peu transformée. 

Produits ultra-transformés cachés

Il est parfois difficile de faire la différence entre produits non transformés, transformés et ultra-transformés. Par exemple, une pomme de terre au four est un repas non transformé. Si vous faites une purée maison avec des pommes de terres cela sera un repas transformé et si vous achetez de la purée déshydratée, à recomposer avec du lait et de l’eau, votre repas sera ultra-transformé. De même, si vous achetez du pain montagnard de grande surface (essayez de lire les ingrédients il y en a au moins 10!) et que vous tartinez de la margarine dessus votre tartine sera ultra-transformée alors que la même tartine en apparence sera juste transformée si vous prenez du pain chez un boulanger artisan et que vous tartinez du beurre. 

Attention il faut aussi savoir que le Nutriscore ne prend pas en compte l’ultra transformation ainsi un produit ultra-transformé peut avoir un Nutriscore A.
